Blistered Snow Peas with Roasted Garlic Tahini Dressing

Updated: Jul 22, 2021

Quick and Easy Blistered Snow Peas with a Roasted Garlic Tahini Dressing Drizzle.

Simple and fresh, these blistered snow peas make a great mid-day snack or a side dish. A ripping hot skillet or cast iron pan will be our secret to getting a nice char without overcooking the beans. Garnished with flaky salt and drizzle with roasted garlic tahini sauce, this healthy vegan snack is hard to beat.

This recipe is perfect for a midday snack, because it can be made in about 15 minutes. This recipe serves two people, but I have a hard time sharing these.

For this recipe, you will need a cast iron skillet or a wok. Heat the pan on high for 3 minutes, then add in your Tbs of olive oil and allow that to heat another 2-3 minutes. The pan has to be ripping hot for the snow peas to remain fresh and crisp while getting a good char. When oil is shimmering, carefully add in your snow peas, avoiding any oil that may pop. Arrange peas into a single layer and set a timer for 3 minutes and walk away. DO NOT TOUCH THE PEAS!

I REPEAT, DO NOT TOUCH THE PEAS! Its going to be tempting, because there will be a lot of noise and it will sound like they are burning, but do not touch until your 3 minute timer goes off. When timer goes off stir the peas in the skillet and set the timer for another 2 minutes. Depending on what they are looking like and your preference, you can stir during this 2 minutes, or allow to char more. After that 2 minutes, turn the heat off and immediately serve with flaky sea salt and roasted garlic tahini sauce.
